Cake Decorating

This is the basic cake recipe.  You can substitute any kind of cake mix.

BASIC CAKE RECIPE
1 Package cake mix
1 cup water
3 eggs
1 cup mayonnaise 

Bake cake according to package directions except use the above ingredients to make the cake.

HINTS:
After the cake is baked cool completely and wrap in plastic wrap then foil.  Place in the freezer.  A frozen cake is easier to cut in half when creating the layers.

Pre-bake layers and keep in the freezer for quick desserts.

CUSTARD FILLING:
1 qt heavy whipping cream
2 small packages instant pudding (your choice)
2 tsp. vanilla
(You can add ½ cup sugar if you want the filling sweeter)

On high speed, whip together whipping cream, vanilla, (sugar) and pudding mix until stiff, wiping sides of bowl frequently.

CHOCOLATE FROSTING:
1 lb. powered sugar
¼ tsp. salt
¼ cup milk
1 tsp. vanilla
1/3 cup butter or margarine
¼ cup cocoa power

Beat with electric mixer until smooth and creamy.  If it is too stiff add a little more milk, but be careful not too much or it will get too soft.  You can change the flavor by adding a tablespoon or so of instant coffee or leaving the chocolate out altogether and just making it a butter cream.

CAKE VARIATIONS
To make an Oreo Cookie Cake, simply sprinkle plenty of crushed Oreo Cookies in between the layers and use sweetened whipped cream to frost the cake. Garnish top of the cake with crushed cookies and bottom edge with cookies cut in half.

To make an Almond Joy cake, simply sprinkle chopped Almond Joy bars in between the layers. Garnish with lots of toasted almonds and coconut.

Rocky Road Cake has chopped Rocky Road candy, toasted walnuts, marshmallow cream and chocolate syrup. You can use any kind of the whip cream custard made with pudding that you like. If you want a real chocolate rush use the custard in the middle and chocolate butter cream for the frosting
