Asian Chicken Bites
Preheat oven to 350 degrees
1 lb. boneless chicken breast
1 can sliced water chestnuts
2 -3 green onions cleaned and cut into 2 inch pieces
½ lb. thin sliced bacon cut in half
Toothpicks
Sweet Chili Sauce or Sweet Chili Sauce for Chicken
Sambal Oelek-Ground Fresh Chili Paste
These sauces can be found in your grocery store on the Asian isle if not
there try an Asian Market.
In a medium bowl put approximately 1 cup of the sweet chili sauce. On a
work surface cut the bacon and green onions. Wash chicken, dry and cut
into 1 inch pieces. Add chicken to sauce. Take 1 piece of chicken, a
slice of water chestnut, a piece of onion, wrap with a slice of bacon
and secure with a toothpick. On a cookie pan with sides, place a wire
rack and spray both with no-stick cooking spray. Place chicken bites on
the rack. If you do not have a rack make sure you watch the bites in the
oven so they don’t burn. Cook bites until bacon is done to your liking.
You can put the bites under a broiler but you have to watch very careful
that you don’t burn them. Serve with additional sweet chili sauce (not
left over from raw chicken) and the Sambal Oelek. If you really like
spicy flavor you can mix the sauces and use for coating chicken before
cooking but taste the Sambal Oelek before as it is very spicy.
Pizza Wraps
Preheat oven to 400 degrees
Pizza Dough
Ingredients:
Sausage - cooked
Mushrooms – cooked
Peppers – any kind you like (roasted, raw, hot, mild)
Olives – chopped - any kind
Onions – red, white, yellow, green – raw or sautéed
(I like my onions sautéed except the green ones)
Pepperoni - sliced
Ham
Chicken – cooked and cut up in small pieces
Think of your favorite pizza and use those ingredients just remember you
will be rolling the dough up so you don’t want a lot of moisture to be
contained within the roll. If you want to use pineapple just make sure
you pan sauté it first to get out the moisture.
Shredded Cheese
Pizza Sauce, bottled marinara sauce or homemade sauce
Bring pizza dough to room temperature. Roll out on a floured surface.
Spread sauce on the dough but leave approximately 2 inches at the top to
seal the dough. Don’t use too much sauce as the dough will become soggy
and not cook. Sprinkle on the cheese and add your toppings. Be careful
to not overstuff your dough. Roll and place seam down on a cookie sheet.
Brush with olive oil and bake until dough has risen and browns. It is
hard to tell how much filling to put into your rolls but as you make
them you will get the feeling as to how much you can use. Don’t over
stuff as the dough will be stretched too thin. Once baked let cool and
slice. Serve with additional warmed sauce.
The Un Nacho!
Preheat oven to 375
Layer kettle cooked potato chips with crumbled blue cheese, gorgonzola,
or any semi soft cheese (allouette would be good too) on a large baking
sheet, sprinkle with sliced green onions.
Bake for 5-10 minutes till cheese is melted
